I would like to log the ADC samples coming from the MCP355X Tiny application sensor board to a file on the PC running DataView. Is this possible? The demo board is of very limited use without this simple capability.

Yes. The Data View product can be used together with MCP355X Tiny application sensor board. Before you can do this, you need to download and install the firmware for this board so the OS could handle it. After you did this, open the Data View program and go under Device tab > Configure. By doing this, you will be able to set up the program so it can read data from the board. All the available documents, programs and firmware can be obtain from the official website of the product.
