If you're using a proxy to connect to Internet, then it means that every application (proxy based) should use that proxy to provide its base functionality. This is like a loop and it's a bit complicated to make it run, but there is always the possibility to use Gtalk through the web browser in Gmail's interface. I believe it's the easiest way rather than complicating with proxy-through-proxy.
