Most applications list recently opened files in the File menu. You can find latest files on the same menu. Other have a specific section where you could access files if they are in the same place. In Windows, recent files can be accessed from the Start menu (Windows Vista,7). In Windows XP you need to click on the taskbar > Properties > Start menu > Customize > Check "List My Most Recently Opened Documents".
