I already have pre-printed bank checks, I want to put them into my printer and print the "payable to" name, date, and amount. Will this software enable me to do that?
The Leaf Writer has been designed to write checks the way you want it, you will have to check the Features page on the official website to see exactly what exactly it supports and how.

You can use the user guide to learn how to work with it. Unfortunately, there is no possibility to test it since it's commercial.
