To change the language of your device, you need to go under menu > Settings > Language and keyboard. If Hebrew language isn't among the available ones, you might need to install a custom ROM that has this language. In order to find more about this, I suggest to use Google. You should take a look at MIUI custom ROM. It contains support for a lot of languages, and it can be installed on your device.
