Once you have scanned in a document (hard copy) are you able to edit text and images?

Yes, but in order to edit the elements you will need an application based on the output file format of the scanned document. If it's a plain text document, you can use ABBYY Finereader to edit scanned sections. For images, you need a graphical pdf editor.
