I want to delete data from my floppy disks for good and create something "new" on diskette.

Can I take this data off these diskettes?

You can always erase the disk and then format it accordingly. Once you do this, all data on the floppy disk will be destroyed. In order to replace the old data, format the floppy disk and then copy new content. The old one will not be accessible for recovery even if you use a recovery tool as the previous data were overwritten.
