Can we record the system sound while using a headphone?

Yes. I don't know what will happen if you unplug them, it might cause an audio hiccup but i don't know.

You can hook up an AUX Cable to the Headphone Port on your phone and then connect the other end to the "Line In" Channel on your Audio Interface (or whatever input you have on your Audio Interface) and then record the input with Audacity or any good Audio Recorder.
