To add a background to your emails, start the application then create a new email and press Command-T or go to Format > Show Fonts. Press the Document Color button and choose the corresponding color. After you press that button, there will be a few ways to pick the color: color wheel, color slider, color and image palettes, and pencils.
There is no other way to change the color for your emails if you're using Apple's own email application.
