No, it's impossible to track a device once it has been wiped. A simple wipe will delete all the settings and restore the device to the factory defaults. If you had 3rd party tracking apps installed, then yes, that would be possible, but without a Find My Device and FRP lock, that would be impossible right now.
When you have a device, attach accounts and lock it using Find My Device features, so that if something bad happens, the one that finds or steals it won't have the possibility to wipe it.
