I want to open a Viber account, but I don't want people who got me on their contact list to know that I recently joined Viber.

When installing and activating Viber, you will be asked if you want to let your contacts know that you've joined this service. I didn't try to replicate the behavior, but if you don't activate that option, other contacts won't see you've joined this service.

However, things might change with the update of the contacts. You will appear in their list eventually.
