You will have the option of using Chrome on Vista even after they announced it, but the program won't receive updates and bug fixes, which means that, if a website is infected, and the browser isn't updated, you will most likely get infected with malware.
Google choose this way because the operating systems are not actively maintained by Microsoft or Apple (same thing applies to old Mac versions).
