Is there any way I can create a page from scratch such as text box sizes and placement?

No, you can't create a page from scratch, because you will have to use the available templates. I have checked the tutorials and the information about the software and after you have selected a template, you can modify it the way you please. Only then you can add text boxes to change their size, placement, look, properties, etc. Simply choose a template, then use the wizard to customize it the way you want it.
