Unfortunately, once you delete a SIM contact/number there is no possible way to retrieve it unless you have a backup stored on the cloud on your computer. Android automatically syncs contacts to the cloud. Access Gmail with the ID attached to the phone and log-in. Click on Mail then Contacts. The contacts should be listed in alphabetical order.
