How can I search for a friend knowing his/her email address but not his/her Kik username?

If you have his/her email address, the simplest way is to search on Google. In Kik, simply click on the chat bubble which has the search function, then use the portion of his/her name and the results will appear in that window. Tap on each one until you find the one you're looking for.
