My phone is showing the name of the person that formerly worked at my desk, but who is no longer with us.

To change the name, try accessing the settings. Nowadays phones allow you to change every part of your identification. Access the contacts app and then look for his name and tap on it. Press the Menu button to bring the Edit menu and go on from there. Change the name and if you use a smartphone, make sure to perform a sync operation.
