You can copy and paste the scanned item into a Word document as a picture, but if you want to edit the scanned document you will need an OCR (optical character recognition) program. To most common tool is Microsoft Office Document Imaging. If your Microsoft Office package doesn't have this tool, you can download it from Microsoft web page, but it's only available for Office 2003 and Office 2007. After installation, you can open the scanned document with Microsoft Office Document Imaging and from the Tools tab you can select Send text to word. Your scanned document will be converted into a Word document.
Other programs that you can use for converting and moving scanned documents into Word are: ABBYY FineReade, TopOCR or SimpleOCR .
If you want to move your scanned document into Pages you need to start Image Capture and select your scanner. Press the show details button and on the right you will have many options. From Format button you can select the format of the document that is about to be saved.
