So, they've added speech-to-text recognition recently, that's cool. But as much as Evernote gets everything I say right, it doesn't put any commas or full stops even if I make an exaggerated pause between phrases. Nor does it process words like 'comma' as triggers for punctuation marks. So how do I put commas in a spoken note (except by post-editing)?

You can't put commas in a spoken note. This is a well-known limitation of Evernote. You will need to manually add punctuation once you finish the text and perform the proofreading procedure.
