I have a copy of Publisher Pro 2.0. Will it work with Windows 8?

The product is known to work in Windows versions up to Windows XP only. Any attempt to run the application in Windows 8 could lead to compatibility issues, but you can also try to do it since it's completely safe. You should set compatibility to Windows XP to increase chances to work correctly.
