Unfortunately, there is no dedicated converter to save EDI invoices to Excel. I have seen some apps that allowed conversion between invoices and XML formats, but the information is vague and impossible to be used in this case.
You will have to look for the Export or Save As options available within the software in order to export the content.
Additionally, access the Help > Contents for the software you use to create those invoices to learn about the possible ways of exporting.
