To change the account, firstly you will have to add another. Go to Applications > Settings > Accounts > Google. Add another account, then switch to Play Store and use the guide in the image below. In the red zone, it's my email. On the square marked with yellow, a new arrow will appear. Tap on the arrow and choose the new email.
