The answer is no. You can't modify the settings of an on-going ripping operation. However, if you want to make adjustments, simply stop the process, then start it again. This time adjust the audio settings and choose Normalize. You will have a significant increase in the terms of audio quality and sound levels. This works for Audio CDs as well.
