Yes, it is recommended to uninstall the previous drivers, before installing the new ones. Usually, when you launch the new installation package, it will automatically replace the previous drivers, but I suggest you remove it manually. For this purpose, right-click on the Computer icon, select Manage and open Device Manager. Locate the Realtek Ethernet driver, right-click on the driver and select Uninstall. After that, reboot your PC and install the updated driver.
