When converting files to MP3, the default genre is always "Blues". Is there a way to not indicate a genre or leave this space blank?

You can't change the default genre because there is no option that can be set up to modify this value. Try to open the file in Winamp, then select it on the list and press ALT +3. From that location, you can change the default genre or any other related ID3 setting.
