Almost any DVD ripping software gives you the possibility to select what to extract from a DVD, including but not limiting to subtitles. Usually the subtitles option is found on the settings menu. From that location you can choose what languages are available for extraction. Every subtitles language has a check box. Uncheck all boxes and then rip your movie and the subtitles will be turned off while ripping is in progress.
