Does vinyl conversion produce files with better sound quality than simply downloading MP3 files from the Internet?

I'm looking to get a software package that helps me convert my vinyl albums to .mp3 so I can have them in iTunes with all of the associated song/album information.

The process of converting recordings to iTunes is taking approximately 30 minutes per 3 minute tune. Why so long? Is there a better way?
