I have consolidated a folder that has 5k files when undo option is closed. How to transform the file log file into UNDO XML file?

There is no possibility to create an XML file for the UNDO log. I've downloaded and launched the app, but without any possibility to configure it for XML export. The UNDO log is in plain text format. You can use it to import it into another document processing tool and then export it into XML if you have the necessary knowledge.

I would have recommended contacting the developer, but its official website is no longer working which could also render the software discontinued.
