The only way to recognize apps is to actually launch them and see what they do. It's impossible to see exactly the features and the meaning of an app if it's Chinese, because it could be anything. Just start and app and see what it does, then take notes about it and then use Debloater to keep it or remove it.
For phones you should have the basic functions available like: SMS, Phone, Contacts, Google Play. Everything else can be added afterwards.
